Crockpot Huli Huli Chicken

Oh my goodness.....this stuff is SO GOOD.
When the hubs likes a chicken dish, you know you have a winner. (honestly, I think he really likes MOST chicken dishes, but is biased against the poor meat.....)

So, I found this recipe on pinterest a long time ago and I made it before and remembered liking it.....so when I wanted to throw some chicken in the crockpot and come back later to delicious food, I thought of using it as a marinade/sauce.

As I changed things up a bit, I thought I'd write out my own recipe. Because it's AMAZING.

1 bag frozen chicken tenderloins, thawed
1 medium onion, sliced
1 bell pepper, sliced (I used an orange one because that's what I had)
1/2 c Ketchup
1/2 c Soy Sauce (I used Braggs Liquid Aminos)
1/3 cup chicken broth
1/2 c Brown Sugar
Garlic---fresh minced or powered, to taste
Ginger----fresh minced or powered, to taste

Mix all saucey ingredients together and pour over chicken. let marinade 1/2 hour to overnight.
Put in crockpot. Cover with onion and bell pepper.
Cook on high for 4-6 hours. Break up chicken into desired sizes.
Serve with rice, quinoa, or whatever sounds good.
